Chicken Korma
You can make it in ghee (clarified butter) or oil, as the way you want. But here today I am going to use ghee. Here I have taken 4 onions. Which I have chopped lengthwise. Ghee has melted, now let's add the chopped onions.
To this we will add 1/2 a spoon of salt and sauté it. We will fry this till onions turn golden brown in colour. Usually this onions are fried in boiled oil like we make it for barista. I have brown them in some ghee.
Onion has turn nice and golden brown. Let's turn off the flame. And wait till the onions have cool down. Onions have cool down, now let's add that in the mixer. With that we will add 2 to 3 tablespoons of curd.
We don't add water while we make Chicken Korma. We will add more curd, around 2 spoon more. Let's turn on the flame. We will add little more ghee into it. Now add onion paste into the pan. 1/2 a spoon of salt.
1 spoon of red chilli powder. 1 spoon of cumin seed powder. Turmeric powder. Coriander powder, around 3 spoon. Mix it well. Now we will add 3 spoon full of ginger garlic paste. Fry this nicely. Now to this we will add in chicken.
This chicken weighs around 700 grams. Continue mixing them. Now add in around 1 full cup of curd. Now we will add 4 to 5 crushed green cardamom. 1 spoon of black pepper coarsely grounded. 4 to 5 cloves.
Mix it nicely. A little piece of cinnamon stick. I am done adding all of the whole spices. Now goes in some coriander leaves. If you want more gravy then you need to add around 1 and 1/2 or 2 cups of curd.
Because we won't add any water or tomato into it. Now let it cook for 10 minutes on low flame. It took 15 minutes for the chicken to cook. Our chicken is nicely cooked now. Now in goes some Ginger Juliennes.
1/2 a spoon of nutmeg powder. Some mace. Little bit more of garam masala powder. And this is cashew nut paste, which I have made from 10 to 12 cashews. Coriander leaves. Now serve this. Here is Mughlai Chicken Korma ready.
