Hara Bhara Kebab
Today in the K kitchen we’ll be making Hara Bhara Kebab. For Hara Bhara Kebab, first we take spinach leaves and wash them nicely, so that there is no mud on them.
And then drop them in boiling water. In this boiling water, we give them a quick boil. Now make sure that we have chilled water ice-chilled water nearby. This hot spinach, these leaves we pick it from the boiling water and put them straight into the chilled water.
This is done to stop it from cooking, and keep, it’s color intact. It has cool down, Now we squeeze them like this. And the excess water will come out. We have this mixer-grinder, we put the spinach in this and with that, we add fresh mint leaves.
There. We will grind it. Keep it in mind that we grind it using the least amount of water required. Nicely ground. Beautiful. Now, we’ll heat a pan. We’ll put some Desi Ghee in the pan. Heat it up.
Add to this a little Cumin, chopped Garlic, chopped Green Chilli. And we cook this on low flame till the Garlic is brown. Which happens very quickly. There. Now we add the Spinach and Mint paste to this.
And we’ll Fry it nicely. Fry this for at least 3-4 minutes on high flame. The Spinach is nicely cooked. Now turn off the gas. And take it out and cool it down. This will take about 10 minutes to cool down.
Alright. Heat up a fresh pan. Put a little Gram flour in it and roast it lightly. Very lightly. Cook this till it turns a little brown. Alright. It has turned brown. It has nicely roasted. Just a little.
It goes on top. One the flour will bind this, second, it also provides a very nice taste because roasted Gram flour has a very good smell and flavor. Now. This is cold now, we add in this a little boiled potatoes.
Add a little Coriander powder, just a little. A little Fenugreek leaves powder. We have this dried and chopped Apricots. You can also put Raisins in this if you want. Now we mix this nicely. Add Salt in this.
Mix it very nicely. The mixture for Hara Bhara Kebab is ready. For the Kebab’s stuffing, I have chopped nuts which has finely chopped Almonds, Cashews, and Pistachios. We'll give this stuffing in the Kebab.
We’ll take a very small portion, you can also put some Ghee on your hands, so that the kebab doesn’t stick. Give it a round. Make a depression here and put some nuts in this. There. Close it. Fold it.
Next one. Make a depression, put in the nuts and we'll close it. Lightly press it. Now, the next step is optional. We have bread crumbs. You may dip the kebab in the crumbs and then fry them or directly fry them.
So, I love the outer crispy texture. I will, in this way, Coat it lightly very lightly. We have Desi Ghee, let it heat up. Again. This kebab is always cooked on a high flame because we just have to give it a color from outside.
The insides are already cooked. Shake off the excess bread crumbs. And shallow fry it. You can deep fry also but shallow fry is the best because it uses less Ghee or oil. Beautiful. It will take around 2 minutes to get ready.
Till then we will prepare for the plating. Okay, carefully we’ll plate the kebab. They are very soft so we need to be very careful. We’ll garnish it with some fresh Mint leaves. I have this Chilli mayo dip.
Our Hara Bhara Kebab is ready.
