Paneer Masala
Hello, my lovely friends: how are you all doing Today? I will show you a simple and basic Paneer Masala. This would be Dhabha style. It is so easy to make this at home. Even if you are a bachelor, you can make it easily.
So let's get started In order to make Perfect Dhabha style. Paneer Masala Take 1 table spoon basan in a pan Cook it on low/medium heat for 1-2 mins. This would give the gravy the rich texture. This is the secret ingredient that is used in all dhabas and restaurants, Roast it in this way Switch off the gas flame after 2.
Mins Transfer this onto a plate. I have used 250 gms paneer here. I have cut it into small cubes like this Medium sized cubes. We will marinate this Put some salt 1/2 spoon red chilly powder 1/4 tea spoon, turmeric/haldi powder Mix these well with your hands So that it gets coated with the masalas.
This is optional, however, you can use raw paneer as well. It gives a nice taste to the paneer gravy in this way. Leave it aside for 5-10 mins, Take 1 tablespoon ghee in a pan. You can use oil or butter as well.
It gives a nice flavour to the gravy Fry the paneer cubes inside this, Keep them one after another Fry them in this way for 3-4 mins Or unless it does not turn golden brown, They should be fried and maslas should be coated on them.
Paneer is leaving some water here, since I had kept them in fridge. Keep flipping them on all sides. Do not make them very dark Else. Your paneer will turn hard and chewy Do this entire procedure in medium flame Now these are fried.
Well Now keep them aside. I am storing it in pan itself with the ghee masala. We will use them later in the gravy. Take 2 tablespoon oil in a wok 2 table spoon, ghee or butter. Let it melt Add 1 spoon jeera As soon as it starts to crackle.
Add 3-4 laung. 1 small dal, chinni, 2-3 dry red chilly Gives a nice color to the dish. 1/2 tea spoon, hing 2 green elaichis, 1, tej, patta Fry them for some time for 30-40 seconds. All ingredients are available in description box.
All masala are fried well Now add onions. I am using 3 onions here, finely cut. You can also puree your onions in a mixer as well Fry them on medium flame for 4-5 mins Until they turn golden brown. It will give the rich and thick texture to the gravy Cook it for some time.
This way Until they turn golden brown 1/2 tea, soon, salt 2 table spoon, ginger garlic, paste Mix it for some time Now. This has turned golden brown, Add kashmiri red, chilly powder, 1 spoon, dry, dhaniya powder, 1/2, spoon, jeera powder, 1/2, spoon, garam, masala, Add the earlier besan now Mix them well on low/medium flame Cook them on low flame.
Only Else they will start to burn Looks so good and flavourful Do this for some more time Now. This masala is almost ready now Do not make it very dark, Add tomato puree. I have used 4 tomatoes here. You can also do a puree of it as well Mix them well, together For 3-4 mins, Make sure to cook it on medium flame now Cover it with a lid.
Keep on low/medium flame for 5-7 mins Tomatoes will start to leave oil from the sides Cover the lid and check See the nice color it has given. Now this is perfectly cooked. Add little water at this stage Mix it well Keep the gas flame to low.
Now. Add curd to the gravy now Add 3-4 table spoon thick curd, Give a nice thickness to the gravy Mix it well For 2-3. Mins, Add 3-4 green chillies slit Mix it well 1 tea spoon, kasoori, methi, Crush it and put it on top.
Add some more water. You can use little or more water, as per your choice, Do not put too much water, since this gravy should come thick Mix it for some time Cook it on low/medium flame for 2-3 mins. Now the thick base is ready.
You can use this masala to any vegetables of your choice. Now add the paneer pieces to the gravy Put all pieces together Now mix it slowly. If your paneer pieces are soft, they might tend to break Cover it with a lid For 2-3.
More mins Looks so good and flavourful: Perfect red color, Thick gravy consistency, Sprinkle fresh coriander on top Mix it well Now this looks ready to serve Perfect spicy, masaledaar, Dhabha style, Paneer Masala Enjoy with tandoori rotis or phulkas Friends.
