Ladies and Gentlemen, Boys and Girls, welcome to my kitchen the K kitchen. If you ask anyone to name any one soup, the first name that occurs to maximum people, is Tomato Soup. Tomato soup is liked by everyone and I will serve today’s version with Garlic bread and I will serve today’s version with Garlic bread Alright to make the soup, we need fresh Tomatoes, always fresh tomatoes.
And we cut them in half. We put the tomatoes in this bowl. Heat the pan. And put some oil in it. Just enough oil to cook the spices. Excess oil will surface on the top which is not what we really want.
First, we add in a few peppercorns, little Coriander seeds, Cumin, Cinnamon, Black Cardamon. We have to cook it lightly. The Tomato soup which we are making today that is also called Tomato Shorba. And its consistency is very very thin.
Cook the spices. In this goes sliced Onions. Very little. Garlic. Ginger. Everything is ro ughly chopped because we just have to lightly sauté this. And very little diced Carrots. Lightly cook it. Add in a little Kashmiri Chilli Powder.
Quick stir, and in this goes Tomatoes. Just a little bit of water, dash of water. In this goes Salt. Now we cook this nicely. Cover this. We do not put in a lot of water in the first stage. In the first stage, we just cook it nicely in less water And after that we add water in it.
Till the tomatoes are boiling, we start preparations for the Garlic Bread. For the Garlic Bread, you can use a bread loaf, or you can also use sliced bread. Always cut the bread with the bread knife. Just about half an inch thick slices Now, we have this Butter, which is soft, means it is not hard or taken from the fridge.
We'll put it in a bowl. We'll add a little chopped Garlic to it. Mix this nicely. Not too much, just a little. Smear this Garlic Butter on the bread like this. Smear this Garlic Butter on the bread like this.
On to one side. And Garlic Bread is a bread which is liked by everyone. I think the marriage between garlic and butter is just heavenly. There. Now. Tomatoes. Are you seeing how the tomatoes have mashed? The moment I hit them with the ladle, they just squish.
At this stage, we fill this entire pan, with water completely. The stem of the Coriander is washed and added to it in a good amount. Coriander gives a nice flavor and freshness to the tomato. And now we cover it and for at least 20-25 minutes, boil it nicely.
In the meantime, we have this griddle. If you want you can also make the garlic bread in an Oven at about 120 degree Celsius for a couple of minutes.Till it gets crisp and brown or on a griddle too. It is very easy on a griddle.
Heat the pan. And Butter side down and the pan should be medium hot not very hot. And we toast it on a mild flame. To make a crispy Garlic bread the only secret is that you toast it on mild flame for a long time.
Gently you can press them and let them be. Alright time to turn the bread on the other side. Look at that. They look absolutely gorgeous. Beautiful. Now, let’s have a look at our soup. Wow, look at that.
As long as this boils, all these spices will spread their flavor. The tomatoes will get mashy, the carrots will provide a body to this soup. With that the sweetness of the carrots works as a contrast, as the Tomatoes are sour, the Carrots provide sweetness.
For the tomatoes to get completely mashed, there is still 10 minutes. So we cover and cook it. And till then we'll prepare for the plating. Alright. The Garlic Bread on the side. Now we’ll check the soup.
Tomatoes are completely mashed up. Now we have to strain it. You should press it nicely and strain it. What happens by straining is like this carrot as you press it with this sieve, it will mash like this, mixes with the soup and thicken the soup This will take some time probably 5-10 minutes but it’s worth the wait.
Just mash it completely. Alright. You can see it has squeezed completely. Now we remove this with a spoon. Now in a fresh pan, we heat the soup again. Salt, little bit. One good boil and our soup is ready.
And it’s soup time now. And some crunchy Garlic Bread. Last but not least a sprig of fresh Coriander, let it float. And Tomato soup with Garlic Bread is ready.
