Greeting! As Diwali is keeps approaching, just when 15-20 days are left that's when we start thinking about what and which sweets to make, to make something different sweets.
So today I'll be showing you all a special sweet recipe, called the Kaju Pista Roll (Cashewnut Pistachios Roll). Let's start with turning on the gas first. Firstly we'll add in 1/4 cup Sugar, because if you go overboard with the Sugar, the syrup becomes too much and the Cashew dough will become very stiff to roll.
So try to measure the Sugar before adding it that's only how your recipe will turn out well. Now goes in half the quantity of Water of Sugar, so half of 1/4 cup. And now we will get one string Sugar syrup once the Sugar melts.
We'll keep a check on that and then add in the Cashewnut Powder. The Sugar has melted in the Water, Now we'll check the one string consistency of the Syrup.. ..when the last drop falls from the spatula, you'll see a string forming.
Okay, this is done. Now we'll be adding in the Cashewnut powder. Add in 1 cup Cashewnut powder. And form a nice soft dough. How to make Cashewnut powder I have showed you in the previous video for that you must see the Kaju Katli video.
This is now coming together and forming a dough. This is done, we'll now turn off the flame. And we'll spread this mixture on the side of the pan, and till this dries up, I'll start with making the filling.
In a bowl, take 1/2 cup Pistachio powder, 1/4 cup Cashewnut powder, and 1 tbsp Powdered Sugar. And to this add in some green food coloring. Firstly add in a little bit and if needed we'll add in more.
Now mix this in and add keep adding Water and form a dough. Did you see, we added so little Water. We'll add in some more Water. We've not even added 1 tbsp of Water. The dough formed, we'll keep this aside.
The mixture I spread around in the pan, has now formed into a ball and this is the Pistachio dough here. We will now start rolling this. Here I have a plastic sheet, it is a food grade plastic. So now we'll roll this out.
We'll first make a small roundel of this, and keep another plastic sheet on this. And roll this nicely in a rectangle shape. We'll remove the top plastic, and next we'll add in the Pistachio stuffing we made.
In this way, our Kaju Pista Roll is ready. You can place a silver wark on it or just wrap it up in the butter paper just like this. And here's a little tip, roll this this when it's lukewarm only because if this becomes hard, it's difficult to roll it.
So we think our recipe didn't turn out well. We will now cut this roll. First we'll cut the edges. Our Kaju Pista Roll is ready! And do make this in this Diwali and let me know in the comments.
