Hi! Welcome,Today I am going to show you how to make Shankarpare. When one thinks of making shankarpare, everyone wonders if they could get the perfect texture. Whether it will become hard or not, fluffy enough or not or completely flat.

For quarter kilo of shankarpare, the ingredients required are oil for deep frying, all purpose flour according to requirement 1 small bowl ghee, 1 small bowl of water, 1 small bowl of sugar and salt according to taste.
Let's start making shankarpare. The first thing I am going to do is boil sugar, ghee and water. I am adding 1 small bowl of ghee to the saucepan, 1 small bowl of sugar and 1 small bowl of water.
And salt according to requirement. Remember add very little salt. So I have added sugar, water and ghee and they have come to a boil. Now I am going to cool this liquid mixture. Once the liquid mixture cools, I will add the flour and knead it into a dough.
There are some people who add milk in this process as well. However, if milk is added, the shankarpare will not last for long. That's why I have used only water to make this liquid mixture. Now that the sugar has melted, I will transfer the liquid mixture to a plate for it to cool.
and once the mixture cools, I will add flour according to requirement. The mixture has cooled now. Now, on a low flame I am going to heat oil for frying. The mixture has cooled properly, I am adding flour according to requirement.
The dough is formed. I would like to share a tip with you'll here. Once the dough is formed, everyone tends to cover it and keep it aside. However, that should be avoided. The dough should be used immediately.
This is because I have added ghee and ghee tends to make the dough hard if kept aside for long. Now that the dough is ready, I am going to start rolling them out into chapatis. I have made flat dough balls which I will start rolling out into chapatis.
I am not dusting any flour while on the chapatis while rolling them. The chapati should not be too thin or too thick. Now that the chapati is made, I am going to cut it into small squares by using a cutter.
I am sure everyone will be thinking what is to be done with the uneven edges, they will be wasted once cut? So the best thing to do is cut the edges with the cutter and add it to the dough. Once the edges are cut, I will making small squares with the help of a cutter.
Now I am done cutting the chapati into squares. I am now checking if the oil is well heated. The oil is well heated, thus now I am adding all the cut pieces to fry. The shankarpare's are ready.
I am going to reduce the flame before removing it to ensure the oil remains heated for the next batch. Now that they are ready, I am going to serve them. Remember, to remove the shankarpare's on a tissue to get rid off the excess oil.
