What we're doing today, bienvenidos welcome to Spain on a Fork. Today we're, making the most incredible breakfast skillet with roasted potatoes, eggs and tomatoes. This is seriously so amazing. It's, delicious it's.
Incredible it's, like every great word that you can think of plus it's very easy to make uses simple ingredients and it's done in about 30 minutes seriously. I could eat this everyday and not only for breakfast, but for lunch or dinner, because it's that good and it's so easy to put together now.
What gives this dish that big punch of Spanish flavor is the paprika so make sure you use a good-quality Spanish paprika. As always, I'm gonna be using Kiva's. Sweet smoked, Spanish paprika. Folks, let's get started. We're gonna begin by washing 2 medium sized yukon gold, potatoes scrub them dry now to cut the potatoes. I'm gonna cut the potato in half cut each half in half to end up with 4 quarters and then on each quarter.
I'm gonna cut 2 slits and chop the potatoes to end up with about 9 pieces from each quarter and as you're, cutting the potatoes add them into a large bowl. Once you have all your potatoes cut. Add a generous tbsp of extra virgin olive oil to them season with sea salt and freshly cracked, black pepper and toss this together.
Until everything is well combined, then add the potatoes into a baking tray, lined with parchment paper and add the potatoes into a preheated, oven. Bake + broil option 250 C, which is about 475 F. Ok, while our potatoes are roasting, let's, get to the rest of the ingredients.
I'm gonna finely mince 3 cloves of garlic and finely dice 1/2 of an onion. Next up, we're gonna grab a fry pan heat it with a medium heat and add 2 tbsp of extra virgin olive oil about 2 minutes after adding the oil, add the diced onions and the minced garlic and mix them around with the Oil, you wan na mix this continuously that way that garlic, doesn't burn about 3 minutes.
After adding the garlic and the onions, I'm gonna add a generous 1/2 tsp of sweet smoked, Spanish paprika and mix it in there with the garlic and the onions once everything is well mixed and you wan na do this pretty quickly.
That way, that paprika does not get a bitter flavor. I'm gonna add 1 can of diced tomatoes. This is about 15 ounces, add 1/2, a tbsp of parsley, flakes season with sea salt and freshly cracked, black pepper and mix it all together.
Until it's well, combined once everything is well mixed, lower the fire to a low heat, and we're gonna let this simmer until our potatoes are done. While we're waiting on the potatoes, I'm gonna grab 3 large organic eggs and crack each one into an individual bowl.
Why am I doing it this way that way, when I´m adding the eggs into the pan, I make sure that there´s no shells going in there 20 minutes after adding our potatoes into the oven, take them out of the oven.
Add the potatoes into the pan with the tomatoes and mix everything together until it´s well, combined once everything is well mixed, I´m gonna add the 3 eggs into the pan and place a lid on top about 4 minutes after adding the lid into the pan, I´m Gon na remove it and i´m gonna cook this for another 1-2 minutes its been about 5-6 minutes since we added the eggs into the pan and in my opinion, these eggs look perfectly cooked.
So I´m gonna remove the pan from the heat to garnish the dish. I´M gonna grab a couple fresh, chives and roughly chop them and then sprinkle the chives all over the skillet. This is gonna add a beautiful balance of flavors and for the final step, which I almost forgot, I can´t believe that make sure you season the eggs with sea salt and freshly cracked, black pepper, ok, guys our dish is done.
It smells so amazing in the kitchen it makes me wan na do some kind of dance seriously I´m gonna get in there, give it a try and let you guys know how it taste. This looks beyond amazing. Here we go first off.
